Mac n Cheese

Who doesn’t LOVE a good ole Mac n Cheese? This is serious comfort food. It’s the kind of food you nestle into the couch with, turn on your fav Netflix series, undo your top button of your pants and stuff your face. This one doesn’t disappoint so get a pot of water on, get your pasta out, whatever cheese you have, an onion and let’s get going.

Note: you can double or quadruple this recipe if you want. And, you can add anything to it, chilis, canned tomatoes, ham, prosciutto…. seriously, make it your own!

Ingredients:

Macaroni

1 brown onion

1 Tbsp Olive Oil or butter

2 tsps powdered mustard

2 Tbsp plain flour

3 cups of cheese (I like to use a strong cheddar and will add in a few knobs of blue or whatever I have leftover from a cheese board or anything in the fridge). 

1/2 cup milk

Salt & Pepper

Method:

  1. Sweat your onions in your Tbsp of oil or butter.

  2. Add salt and pepper (to taste) and mustard. If you’re adding anything extra here like chilli, cayenne this is the time to make that addition,

  3. Add the flour and as you add this it will become all stuck together. This is good.

  4. Add your milk and if you need more add more. You want this consistency to be smooth. Not too thick and not too runny (sorry, can’t be any more accurate than that).

  5. Cook your pasta according to the package. When finished drain and return to pot or large bowl. Doesn’t matter if it cools off at this point - it’s fine.

  6. Add cheese to your white sauce mixture. Use whatever you want. I like aged cheddar, parmesan and a few knobs of blue cheese. I use whatever needs to be used up in the fridge. Experiment and see what everyone likes. You can’t really go wrong with Mac n Cheese.

  7. When melted pour over cheese that is in the pot or bowl and mix well.

  8. Put in a baking tray and cover with a little more cheese and even bread crumbs or panko crumbs if you want (I don’t do this but some people like it). Go for gold and make it your own.

  9. Bake at 200 for 10-12 minutes and serve.
