Saturday Noodles

Hey, this recipe may seem a little daunting but trust me, it’s not and once you make it once, you’ll be hanging for the next time. Be brave friends and enjoy this burst of flavour. Ingredients

  • 600 grams mince beef

  • garlic

  • spring onions

  • ginger

  • soy sauce

  • sesame oil

  • rice wine vinegar

  • sesame seeds

  • korean chilli flakes

  • dried anchovies

  • kal kuk-soo noodles

  • eggs

  • seaweed

Bulgogi Marinade Ingredients

  • 600 grams mince beef

  • 5 Tbsp Soy Sauce

  • 2 Tbsp brown sugar

  • 2 Tbsp rice wine vinegar

  • 1/2 korean pear (thinly sliced, you could use an apple or a normal pear)

  • 1/2 Onion sliced

  • 2 crushed/minced garlic

  • 2 green onions chopped

  • 1 knob of ginger grated

  • 1 carrot grated

  • 1 Tbsp sesame seeds

  • 1 Tbsp sesame oil

  • 1 tsp black pepper

Method

  1. Whiz up in your hand mixed. I like it a bit chunky so not too much.

  2. Mix it on your beef, use your hands and mix it in.

  3. Put in the fridge until you are ready to eat. 

  4. Pan fry your marinated mince once all side dishes have been prepared

Dumpling Sauce

  • 1 green onion chopped

  • 1 Tbsp korean chili flakes

  • 2 Crushed garlic

  • 6 Tbsp Soy Sauce

  • 1 tsp sesame oil 

  • Sesame Seeds

  • Sesame oil

(Double this or triple if you want to keep for other usage)


Korean Spicy Cucumber Pickles

  1. Chop cucumbers (in rounds)

  2. Place in a colander and sprinkle generously (2tsp) with salt to draw water out, mix up - about 30 mins. 

  3. Take little bunches and squeeze in your hand to get the water out. The cucumbers will look bruised but don’t worry, that’s what you want. 

  4. Add 2 cloves of chopped garlic

  5. 2 Tbsp chili flakes

  6. 2 tsp of sugar

  7. 1 tsp rice wine vinegar

  8. Mix - cover and set until ready to eat

Eggs

  1. 6 eggs

  2. Mix eggs really hard. You want the consistency smoother than scrambled eggs. You are wanting a silky egg. 

  3. Put small amount of oil in a non stick pan.

  4. Pour a bit of egg to cover bottom (like a crepe)

  5. Cover and cook slowly through.

  6. Remove from pan, roll into cigars and slice

Broth

  • 6 cups of water

  • 1-12 dried anchovies

  • Bring to a boil (you can cook this the day before)

  • Once boiled, take the anchovies out

Noodles

Kal Kuk-soo - cook for 6 mins. 

Assemble

Put all the sides in side dishes plus cut up 2 packets of seaweed and assemble.
