7-Layer Retro Dip

Wowzers this one goes down like a treat. I pulled this one out of the archives a couple of years ago when we were going camping.

To my surprise, my kids GOBBLED it down and asked for more. This is perfect to take in the esky/cooler to the beach, camping or on a lazy afternoon. It never disappoints. 

Pan Size 9x13.

INGREDIENTS

  • 1 ½ ground beef (grass-fed preferably) 

  • 1 can refried beans (stir in taco seasoning either homemade or packet)

  • 4 cups shredded cheese

  • 1 container of sour cream 

  • 1 cup guacamole

  • 1 cup salsa (store-bought is fine or you can make your own – super simple)

  • ½ cup black olives

  • ½ cup chopped tomatoes 

  • ½ cup green onions 

Method

  1. In a large pan, brown ground beef and add taco seasoning.

  2. Either make your own (see below) or cheat and use the El Paso seasoning mix. 

  3. Mix beans with taco seasoning (homemade or packet).

  4. Spread the beans into the bottom of a 9x13 inch serving tray that is about 1 1/2 inches deep.

  5. Sprinkle 2 cups of shredded cheese on top of beans.

  6. Sprinkle beef on top of cheese.

  7. Spread sour cream very slowly on top of beef.

  8. Spread guacamole on top of sour cream.

  9. Pour salsa over guacamole and spread evenly.

  10. Sprinke chopped lettuce.

  11. Sprinkle remaining shredded cheese.

  12. Sprinkle black olives, tomatoes, and green onions on top.

  13. Note: black olives aren’t necessary but do add a nice flavour. 

  14. You can serve this dish immediately or refrigerate it over-night and serve cold. I think it tastes better at room temperature.

Make at home taco seasoning

  • 2 tbsp. chili powder

  • 1 tbsp. ground cumin

  • 1 1/2 tsp. smoked paprika

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • 1 tsp. salt

  • 1 tsp. Black pepper

  • 1/2 tsp. dried oregano
